Ingredients:
- 8oz Penne Pasta
- 2 Tbsp Butter Substitute, Bacon Fat, or Oil of Choice
- 1/4lb Diced Pancetta or Diced Bacon
- 1/3 Cup Vodka
- 1/2 Cup Canned Coconut Cream (drain liquid and only use solids)
- 1 & 1/2 Cup Tomato Pasta Sauce
Bring a pot of salted water to boil and cook pasta according to package directions.
Meanwhile, melt butter, fat or oil in large skillet over medium heat. Add pancetta or bacon and saute until lightly browned. Add vodka and stir until it is reduced by half, about 4 to 5 minutes. Stir in the tomato sauce and canned coconut cream. Simmer uncovered, stirring occasionally, for 20 minutes or until sauce is desired thickness. Serve over pasta sauce.
