Fresh Summer Strawberry Pie

Strawberry Pie Recipe

Ingredients

  • 1&1/2 cup flour
  • 1/2 cup shortening
  • 1/2 cup ice water
  • 1/2 tsp salt
  • OR 1 single layer premade pie crust
  • 4 cups fresh strawberries, hulled (NOT frozen or thawed)
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1/2 cup flour + 1/3 cup flour, separated
  • 1/2 cup brown sugar
  • 1/3 cup oats
  • 1/4 cup butter, cubed
  • 1/4 tsp cinnamon
  • pinch of salt

Directions

  1. Preheat oven to 400 degrees F. Place a drip pan on the lowest shelf in the oven. This will catch pie juices if your pie bubbles over. Skip to next instructions if you have a pre-made pie crust. In a medium bowl, mix the crust ingredients except the water. Blend together with finger tips or pastry cutter. Slowly add in water, 1 tablespoon at a time, mixing after each addition until dough comes together. You may not need all the water. Roll out on a lightly floured surface and place in pie crust. Set aside.
  2. In a large bowl, mix the whole, hulled strawberries with the granulated sugar, cornstarch and 1/2 cup flour. Coat berries evenly. Set aside.
  3. In a separate bowl, mix together 1/3 cup flour, brown sugar, oatmeal, butter, cinnamon and salt. Blend mixture together with your finger tips or a pastry cutter.
  4. Pour berries into pie crust. Discard excess flour mixture. Pour the oatmeal topping over the top of the berries and evenly distribute. Wrap edges of pie crust with foil to prevent burning. Bake pie in preheated oven for 20 minutes. Then, reduce heat to 375 degrees F and bake for an additional 40 minutes. Allow to cool slightly before serving. It can be served warm or cool. You will not regret making this pie! Enjoy!
